Hydrogenation of the fatty acid double bonds significantly improves oxidative stability and enhances emulsifying and dispersion performance in aqueous systems compared with standard fractionated lecithins.
Owing to the compact molecular structure of hydrogenated lecithin, Cosphaderm\u00ae SF-75H is particularly well suited for the formation of micelles and liposomes with stable interfaces.
