The hydrogenation of unsaturated fatty acid bonds results in improved oxidation resistance and superior emulsifying and dispersion properties in water-based formulations when compared to conventional fractionated lecithins.
The structural characteristics of hydrogenated lecithin make Cosphaderm\u00ae SB-75H an excellent ingredient for creating stable micelles and liposomes with compact interfaces.
